METHOCEL K4M is a cellulosic gum, a medium-viscosity K-grade hydroxypropyl methylcellulose (HPMC) thickener. It produces a viscosity of 4,000 cP at 2% in water. It hydrates below 29.5°C, which is relatively high for methylcellulose, but still lower than typical pastry room temperature. K4M offers great potential for gluten-free baking.
